Stuffed Jalapenos
Ingredients:
15-30 (depending on the size) jalapenos
1 lb. ground Italian sausage
½ lb. bacon, cooked and crumbled
1/4 cup minced red onion
1/4 cup minced red bell pepper
3 tablespoons minced garlic
16 oz. cream cheese, softened
1/4 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
Directions:
1. Preheat oven to 350 and set a rack in the middle of the oven.
2. Cut jalapenos in half and remove seeds and veins. IMPORTANT: Wear gloves when doing this or you risk burning your hands, and if you touch your eyes you could burn your eyes.
3. Place jalapenos on a sheet tray and roast for 10 minutes. Remove from the oven and let cool. Turn broiler on medium.
4. Cook the bacon, crumble it and drain the grease. While the bacon is cooking, cook the sausage, breaking it up as it cooks.
5. Add the onions, peppers, and garlic to sausage while it's cooking for about 5 minutes.
6. Drain the grease off the sausage/onion/pepper mixture. Put crumbled bacon and sausage in a bowl and cool to room temperature, then add cream cheese and Parmesan cheese and mix ingredients together well.
4. Place 1 tablespoon of mixture into each jalapeno half (again, this depends on the size of the jalapeno) and top with a little mozzarella cheese.
5. Place the sheet tray of stuffed peppers in oven and broil until mozzarella cheese melts.
