Guacamole

Ingredients:
Serves 6
1 shallot, finely diced
4 scallions (green onions), whites and some of the greens, thinly sliced
2 garlic cloves, pressed or finely diced
Juice of 2 limes, separated
4 ripe avocados, halved, pits reserved
2 Roma tomatoes, insides removed, diced
Chopped cilantro (to taste). If you don't care for cilantro, basil's a good alternative.
Salt and pepper
A dash of Tabasco
Directions:
1. Put the shallot, scallions, garlic and lime juice in a bowl and let sit for 15 minutes.
2. Add two of the avocados to the bowl. Smash them with a fork until smooth.
3. Add the Romas and two tablespoons of cilantro, and mix them together with the smashed avocados.
4. Next add the other two halves of avocado, smashing less vigorously so they retain good texture.
5. Add salt, pepper, and Tabasco® to taste, as well as any additional lime juice or cilantro.
6. Set two of the pits inside the guacamole to keep it from browning.
7. Set in the fridge for no longer than a few hours, or serve immediately with chips or as a garnish for any number of Mexican dishes.
