Caramel Apple Oatmeal Cookies

Looking for a yummy fall treat? Try these scrumptious caramel apple oatmeal cookies, less than 100 calories per cookie.
Ingredients: (makes one dozen)
1 ½ cups all-purpose flour
1 ½ cups old-fashioned rolled oats
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
¾ cup granulated sugar
¾ cup packed brown sugar
6 T unsalted butter, softened
2 tsp. vanilla extract
1 large egg
¾ cup finely chopped dried apple slices
16 caramel candies, chopped
Directions:
- Preheat oven to 350°F
- In a bowl, combine flour and next four ingredients (through salt), stir well
- In a large bowl, mix sugars and butter until light and fluffy. Add vanilla and egg; beat well. Gradually add flour mixture; beat at low speed until just combined. Fold in apple and caramel.
- Drop dough by 2 teaspoonfuls, 2 inches apart, onto baking sheets lined with parchment paper. Flatten balls slightly. Bake for 8 minutes. Cool on pans for 3 minutes. Remove cookies from pan and cool completely on wire racks.
