Barbacoa Beef

Ingredients:

  • 4 lbs beef brisket or beef chuck roast
  • 3-4 chipotle chilis in adobo
  • 1¼ c. beef broth
  • 4 minced garlic cloves (or 4 t. minced garlic from a jar)
  • 1½ T. ground cumin
  • 1 T. dried oregano
  • ¾ t. salt
  • ½ t. ground black pepper
  • ¼ t. ground cloves
  • ¼ c. fresh lime juice

Instructions:

1. Cut the beef into large cubes and place in a slow cooker.

2. Put adobo chilis, beef broth, garlic, cumin, oregano, salt, pepper, cloves, and lime juice in a food processor and pulse until blended, then pour on top of the meat.

3. Cook on low for 8-9 hours or high for 6 hours.

4. Shred the meat.

Serve on a bed of Cilantro Lime Rice or in a soft corn tortilla and add toppings of your choice, like pico de gallo, Guacamole, sour cream and cheese.
